For me it's difficult to judge which is the best
I loved Madagascar, Shrek, The Incredibles.

Ha, I have the same problem.
But the movie that made me want to do animation was .....

Here's why, they were acting, these lamps had no faces, arms, hands and nothing to emote with except poses and simple action, none of the traditional acting tools, they didn't even talk for goodness sake, but they were acting and telling that simple story.

Bolt is my favourite!
I love Avatar - but 3d animation wise it's mainly motion capture which is sorta cheating

personaly i'd go with kung fu panda, beowulf and how to train your dragon. the fight animation in panda is top notch. beowulf is just plain beautiful artwise and i am always in awe of the dragon fight at the end of how to train your dragon. they do such an amazing job of making you feel that dragon's sheer size with it's movements.
